We have fresh eggplant this weekend!
(from the famous San Luis Obispo Cookbook)

1 Eggplant
2 Beaten Eggs
1 Can Tomato Paste or 1 Can Tomato Sauce
1 - 4 Oz. Can Mushrooms + Liquid
1 Onion, Chopped
1 Green Pepper, Chopped. You can substitute fresh green chili's if you like a little spice.
 approx 3
 Parmesan Cheese
 Pinch of Oregano
 Pinch of Sweet Basil
1 Clove Garlic
1 Cup Cheddar Cheese, shredded

Fry onion, green pepper, or chili peppers, and garlic; add mushrooms and seasoning.
If using tomato paste, add 1 can water. If using tomato sauce, don't add water.
Simmer about 10 minutes. Peel eggplant and cut into 1/4 " slices. Dip in egg
then in flour and fry in oil until brown.

Place a layer of eggplant in deep casserole: spoon some sauce on and sprinkle 
with Parmesan cheese and cheddar cheese. Add another layer of eggplant, etc.,
until all ingredients are used. Top with cheddar cheese after it has baked for
15 minutes.
Bake 30 minutes at 300 degrees.
